Rich Simple Sugar Syrup Recipe

Although not as frequently used as its less sweet 1:1 ratio cousin, there are still plenty of recipes that will call for a rich simple syrup. This is 2 parts sugar to 1 part water (hence rich) and can be made with either white granulated sugar or Demerara sugar for use in Tiki cocktails. It lends a completely different, silkier mouth-feel to your drinks.

If you haven’t already followed my suggestion and purchased a set of weighing scales, you really should. For around £15, it will make life so much easier in the kitchen. Weigh out 100g of water and 200g of organic cane sugar or Demerara sugar which will yield around 250ml/8.5oz. Combine them together in a pan over low heat, stirring gently without letting the water boil until the sugar has dissolved and set it aside to cool. Once it’s cooled, bottle it and store in the fridge.

Due to the amount of sugar, it will last much longer than simple syrup and can be stored for months. I bought a set of clip-top bottles from Amazon to store my syrups. They are cheap, dishwasher safe and are perfect for exactly this job. You can find them here.
